DID YOU KNOW?
There is no word in the Japanese language for “hot flash”,
or “PMS”. Nor is there a word for “hot flash”
for the Chinese, or the Mayans or the indigenous Navajos. Is it that
women in these cultures don’t talk about such things, or that
they are doing something significant that American women could benefit
from? The truth is breast cancer, osteoporosis, PMS, and yes, hot flashes
are also much, much lower for these groups compared to “Western”
women. What is the difference?
Above all, the difference is ESTROGEN DOMINANCE. Dr. John Lee has shown
how there is an entire group of “estrogen dominance” diseases.
We would do very well to understand estrogen dominance better and how
to alleviate it.
Many would also say the difference is DIET. Again, diet will determine,
to a great extent, how much ESTROGEN DOMINANCE we experience. Plant-based
diets (like those of the Japanese, Chinese, Navajos, etc.), create less
hormonal imbalances because there is less obesity, fewer pesticides
(found in concentrated amounts in meat fats), and more quality phyto-estrogens
(like those found in flax, which help downregulate estrogen receptors).
Plant-based diets are naturally hormone balancing.
Besides flax, soy has received a lot of press because of the phyto-estrogenic
isoflavonoids. However, note that the Japanese women are getting these
positive effects from fermented soy products like miso, tempeh, tofu
and natto, NOT roasted soybeans, soy oil, soy flour, soy protein isolates,
soy milk, soy hot dogs, soy yogurt, soy cheese, textured soy protein
or cooked soybeans, many of which were created for the American market.
According to Dr. John Lee, some of these products can actually be detrimental
because the genistein levels are too high.
Other phyto-estrogens that have not received as much media or research
attention include resveratrol from grapes, quercetin from onions, and
prunetin from plums and cherries. There are many more. The bottom line
is how much is your diet plant-based versus animal-based or highly processed?
Besides our food DIET, what about our chemical DIET? The Japanese have
developed many uses for stevia, an herbal sweetener, while in the United
States aspartame (NutraSweet), a chemical/artificial sweetener, has
exploded. Also, no other country tops the U.S. in the development of
petro-chemical products, including many common household cleaners, fabric
softeners, pesticides and even beauty products. While cars clog our
highways creating smog, other countries walk more, bike more, and use
more shared transportation systems. Again, the high chemical DIET results
in greater ESTROGEN DOMINANCE because of the negative estrogenic nature
of petro-chemicals.

IN THE NEWS
It’s not common for articles to be published in magazines and
newspapers about the negative effects of aspartame. This may be due
to the heavy aspartame advertisers (like Diet Coke) paying for their
ads in the same publications. But press does exist, like in the April
1999 issue of Mademoiselle magazine. The Aspartame Consumer Safety Network
and Pilot’s Hotline provides an excellent source on aspartame
news.
HERE’S A NOT-SO-SWEET TASTE OF ASPARTAME NEWS
From Mary Stoddard, ACSN’s and the Pilot’s Hotline Founder:
“Pilots report having grand mal seizures in the cockpit of commercial
airliners. Some crash the simulators during "blackout" episodes.
Dozens have lost their jobs due to Aspartame-related medical problems.
Unofficially, the FAA recognized the danger to pilots, but refuses to
come out with formal warnings. Although 80% of all complaints to the
FDA are regarding Aspartame, their ties to industry are so strong, the
issue remains unaddressed. However, the U.S. Navy and U.S. Air Force
have warned pilots in their safety publications of the dangers of using
the chemical sweetener Aspartame in their diets.”
ONE PILOTS STORY
“The first pilot I met who had lost his medical certification
to fly was USAF Major Michael Collings. I met him after hearing him
testify at the third Senate Hearing on the safety of Aspartame. I spent
time with him again when London's Thames TV flew us into Washington
D.C. to tape a special documentary they were doing on the issue. Over
coffee one day I asked him to relate more details of his case. I already
knew how he traced the problems of tremors and seizures suffered from
1983 to 1985 directly to his patterns of NutraSweet consumption. When
his duties took him to remote places where there was no diet soda or
diet Kool Aid, he was free of the tremors, and whenever he resumed intake
of artificially sweetened beverages, his tremors resumed, growing more
severe, and culminating in a grand mal seizure that put him in the hospital
and ended his career as a pilot. Collings' tremors and seizures ended
on October 6, 1985, the day he quit ingesting NutraSweet.”

listing aspartame as one of the ingredients. You may be surprised, as
we were, to find it in regular “sugar” gums as well as “sugar-free”
gums, including (but not limited to): Trident, Extra, Doublemint, WinterFresh,
JuicyFruit, and Dentyne Ice. Also, it is a listed ingredient in Listerine
Pocket Paks and Flintstones kids vitamins. Check your labels carefully.
ALKALIZING YOUR BODY
If you were ever wondering how to replace those MSG soup flavorings,
you’ll find a good kitchen friend in miso, or fermented soybean
paste. Delicious traditional Japanese soups are made with miso, and
they can fast become popular with your children. The best part is that
it is fast and easy to use. This alkaline-forming fermented food is
actually good for you, especially compared with meat-based soup stocks
or salt & MSG based soup flavorings. It is also a great ingredient
for flavorful recipes, like the one below. Tamari is another great flavor
enhancer that is even more alkaline than miso.
ALKALINE HIGHLIGHT: TAMARI - 5.5 and MISO – 5.0; According to
Dr. Baroody (“Alkalize or Die”), tamari is a by-product
of the miso making process. Stronger in flavor than soy sauce. Wheat-free,
highly recommended. Entirely different from soy sauce and “tamari
soy sauce”. (Make sure it is real tamari!) Tamari soy sauce is
less alkaline-forming at a 4.5.
ACID HIGHLIGHT: Commercial (chemically processed) SOY SAUCE. Chemical
processing makes foods that may be naturally alkaline into acid-forming
“non-foods”. Such is the case with soy sauce. If you make
the effort to find “tamari soy sauce” you are not only alkaline
again, but you may find it better tasting. Even better, look for real
tamari and miso.
RECIPES FOR HEALTH
SPROUT MCBURGERS
From the “Sproutman’s Kitchen Garden Cookbook” by
Steve Meyerowitz
Ingredients
2 cups Soybeans
½ cup Tahini
½ cup Sunflower seeds
5 Tbsp. Miso
2 cloves Garlic, diced
1 small Onion, Chopped
1 pinch Cayenne Pepper
1 tsp. Favorite Herbs (optional)
Yield: 5-6 patties
Here’s a hearty dish for those of you who want something to “stick
to our ribs.” Not only is it “meatless,” it is “wheatless.”
Great for helping ease the transition to a vegetarian diet.
Start by soaking 2 cups of soybeans in pure water for 10 hours and
sprouting them in a sprout bag or jar. Rinse twice per day for 3 days.
The sprouted tails should be at least the size of the bean, if not longer.
Place the beans in a pot of pure water and bring to a boil. Let simmer
on a low flame for about 1 hour or until soft. Drain and cool, then
mash the bean sprouts to a paste. A food processor or a Champion juicer
is ideal for this. Both of these leave you with a well-whipped batch
that makes for a pleasant texture. Add the garlic, miso, onion, sunflower
seeds and tahini.
About the ingredients…
Miso and tahini. If you use a dark miso the result is more burger-like.
If your use regular (toasted) tahini the batter will be softer and more
fluid. Raw (untoasted) tahini – harder to find – is more
firm. Regular tahini, however, has that nice toasted flavor. If you
wish to revive the toasted tahini flavor to raw tahini, just add a tablespoon
of dark sesame oil to it.
Shape into patties 3 inches by ½ inch high or use a patty mold.
Cover a flat non-aluminum cookie sheet with either corn meal, sesame
seeds or a 3:1 ratio of regular sesame oil to liquid lecithin. Lay the
patties down and bake for approximately 1 hour at 250 degrees F. They
should be firm and brown when done. Store what you cannot eat in the
refrigerator. They should last for up to 6 days.
If your burgers are too wet, it is probably because there was too much
moisture carried over from the cooked sprouts. Be mindful of draining
all the cook-water off. If you find yourself with soggy soys, compensate
by adding a teaspoon each of your favorite herbs: savory, oregano, sweet
marjoram, or parsley. You can also use granulated garlic (1 tsp.) and
onion (3 Tbsp.) to absorb some of the water. Use raw tahini, eliminate
any dark oil and lay on a corn meal covered cookie sheet.
