Men are more vulnerable to cancer than women. American men have a one
in two lifetime risk of developing cancer. For women, the risk is one
in three. Prostate cancer is a leading cancer concern for men, and it
should be. Prostate cancer incidence rates increased 192% between 1973
and 1992.
One in six American men is at lifetime risk of prostate cancer. A higher
percent of men (17%) are diagnosed with prostate cancer than women (14%)
are diagnosed with breast cancer. Prostate cancer is diagnosed every
2 3/4 minutes, approximately 190,000 new cases each year. It is the
most commonly diagnosed cancer in America among men. More than 30,000
American men lose their lives to prostate cancer each year, one death
every twenty minutes.
An even larger group of men is susceptible to benign prostate disease.
It is estimated that benign prostate disease affects over 40% of American
men by age 50 and over 70% by age 60. According to Dr. JohnR. Lee, MD,
sex hormones play an important role. “Conventional medicine is
beginning to recognize the true role ofsex hormones in prostate disease.
For example, like a woman, a man’s body fat will convert male
hormones into estrogen.
Some physicians advocate using aromatase-inhibiting drugs (such as
Arimidex) that inhibit the conversion of adrenal-generated androstenedione
(a male hormone) into estrone (an estrogen) in body fat. Estrone is
then available to be converted to estradiol. The rationale for this
treatment is the understanding that estrogen is a growth-stimulating
hormone in prostate tissue.”
Prostate cancer, like breast and uterine cancer, is also related to
excess estrogen. According to an article in New Yorker Magazine (July
29, 2002), “Estrogen dominance stimulates breast cell growth and
endometrial cell proliferation in women. In men, estrogen dominance
stimulates breast cell growth and prostate hypertrophy (enlargement).
Estrogen dominance is responsible for the majority of breast cancers
and is the only known cause of endometrial cancer in women. Since the
male prostate is the embryonic equivalent of the uterus, is should not
be surprising that estrogen dominance is also a major cause of prostate
cancer.”Too much estrogen also affects sperm count. In an article
by Geoffrey Lean and Richard Sadler (published March 17, 2002 by Independent
Digital (UK) Ltd.), one of the negative effects of high estrogen levels
in rivers (from pollution and petrochemicals) is male infertility. “Studies
around the world have shown that average sperm counts in men have dropped
by more than half over the past 50 years – from about 160 million
per millilitre of semen to 66 million. Scientists increasingly blame
a whole class of hormone-disrupting chemicals. Evidence suggests that
they cause cancer and damage the immune system, as well as impairing
fertility. And they are ever more ubiquitous. DDT and other pesticides
disrupt hormones, as do PCBs, used in countless products worldwide,
from plastics and paint to electrical equipment.” (For full article

CAN NATURAL PROGESTERONE HELP?
For both men and women, progesterone helps balance excess estrogen.
While men use less natural progesterone cream (10 milligrams per day,

GULF WAR CHEMICALS LINKED TO TESTICULAR DAMAGE

TUESDAY, Jan. 14 (HealthScoutNews) -- A combination of three chemicals
given to Gulf War troops to protect against diseases and nerve gas may
have damaged the soldiers' testes and reduced their sperm production.
That's the contention of a new Duke University study, published in the
Journal of Toxicology and Environmental Health, that showed the chemicals
caused extensive cell degeneration and cell death in the testes of laboratory
rats. Researchers gave lab rats the insect repellant DEET, the insecticide
permethrin and the anti-nerve gas agent pyridostigmine bromide in doses
designed to mimic the human equivalent of what the soldiers received.
The rats showed no outward signs of ailments, Abou-Donia says, but
under a microscope, the testicular damage could clearly be seen. As
a result, he suggests, cases of testicle damage among soldiers could
have been overlooked. Steve Robinson, a Gulf War veteran who is now
executive director of the National Gulf War Resource Center, an information
clearinghouse, says the study's findings come as no surprise. "Although
this particular study is unfortunate news, it's confirmatory news,"
Robinson says. "It will at least close the door so [veterans] know
the reason." As the United States prepares for a potential second
round of war in Iraq, Robinson says the study demonstrates the need
for caution in giving soldiers chemicals. "I think what it says
is number one, we have to be extremely concerned about the use of investigational
new drugs and vaccines in combination with pesticides used in military
applications during war," Robinson says.

ALKALIZING YOUR BODY
There’s nothing like a great dressing to make it fun to eat raw

surprisingly delicious, creamy dressings without sacrificing healthiness.

THE TAHINI STORY*: Tahini is simply liquefied sesame seeds, with nothing
added, subtracted or refined. It has a consistency that is a bit thinner
than peanut butter. Tahini is a high-quality protein containing all
the essential amino acids. Since it is made from sesame seeds, which
are 45% protein and 55% oil, it is rich in lecithin, vitamin E and calcium.
Its high-alkaline mineral content makes tahini easily digestible for
young children and people with digestive complaints, and it is a source
of quick energy for active people and athletes. Tahini has along shelf-life,
probably due to its antioxidant properties but once opened, it must
be refrigerated. Tahini can be purchased raw. Many health food stores
carry only the roasted sesame tahini, but you can ask them to carry
the raw tahini as it is made from the same manufacturer. In the process
of grinding the raw seeds into tahini, reputable companies keep the
temperature from the friction in the grindingmechanism right around
100 degrees Fahrenheit (30 degrees Celsius), which is well below the
118 degrees F. (48 degrees C.) it takes to kill enzymes. The jars are
then immediately capped with a special lid that creates a vacuum. There
is no need for pasteurization, or for the manufacturer to immerse the
bottled raw tahini into boiling liquids or steam. You should be getting
raw tahini that is truly a raw-food product. (This same information

RECIPES FOR HEALTH
CREAMY TAHINI DRESSING (from Nomi Shannon’s “The Raw Gourmet”)
Enjoy this delicious blend as a dressing, sauce, gravy or dip!
PARTY SIZE
2 ½ cups water
2 cups raw tahini (sesame butter)
1 ½ cups lemon juice
1 cup liquid aminos (Bragg’s)
2 cups chopped parsley
1 cup chopped onions
½ cup chopped scallions
10 garlic cloves, chopped
2 Tbs. Ground cumin
2 Tbs. Ginger juice (see note)
1 tsp. Cayenne
Water
FAMILY SIZE
1 ¼ cups water
1 cup raw tahini (sesame butter)
¾ cup lemon juice
½ cup liquid aminos (Bragg’s)
1 cups chopped parsley
½ cup chopped onions
¼ cup chopped scallions
4 garlic cloves, chopped
1 Tbs. Ground cumin
1 Tbs. Ginger juice (see note)
½ tsp. Cayenne
Water
In a blender, place the water and gradually add the tahini to blend.
Add the lemon juice, liquid aminos, parsley, onions, scallions, garlic,
cumin, ginger juice and cayenne. Blend until smooth.
Add additional water if required to achieve desired consistency. Party
size yields approximately 8-10 cups. Family size 4-5 cups.
Note: Make ginger juice by putting chunks of whole ginger root through
a heavy-duty juicer with a juicing screen. Ginger juice will keep for
2-3 days in the refrigerator. This dressing will keep for 7 to 10 days.
Vary the ratio of water to tahini to achieve the consistency you like.
One part tahini to one part water results in a thick liquid. For a milder
taste, reduce the amount of onions, scallions, cumin, ginger juice or
garlic. Vary the flavor of this dressing with basil, dill or oregano.
