DID YOU KNOW?
Excess body fat is a source of excess estrogen. A post-menopausal
woman with excess body fat actually has higher estrogen
levels than a slender woman in her child-bearing years!
Fat is just one more source of excess estrogen, in addition
to xenoestrogens from pesticides and other petroleum products,
hormones injected into animal foods, and even hormones prescribed
by doctors, have created the epidemic of estrogen dominance.
Fat loss means lower estrogen levels, and for many women,
this is an important step toward creating balance after
years of estrogen dominance.
Three basic steps towards fat loss include: increasing
fiber consumption, increasing pure water consumption, and

ALKALIZING YOUR BODY
Macrobiotic enthusiasts also embrace the concept of balanced
eating for maintaining an alkaline/acid balance in the body.
Herman Aihara from the George Ohsawa Macrobiotic Foundation
wrote a book called Acid & Alkaline in 1986. He writes,
“All natural foods contain both acid and alkaline
forming elements. In some, acid forming elements dominate;
in others, alkaline forming elements dominate. According
to modern biochemistry, it is not the organic matter of
foods that leave acid or alkaline residues in the body.
The inorganic matter (sulphur, phosphorus, potassium, sodium,
magnesium and calcium) determines the acidity or alkalinity
of the body fluids.”
Cooking and other processing of natural foods creates more
inorganic matter. For example, minerals that come up through
the roots of a green plant like broccoli are organic while
the food is “alive” (or raw) because they have
an enzyme attached to them. Since the enzyme is the living
part of the plant, it dies in the cooking process, rending
the minerals inorganic.
To keep things simple, eat enough vegetables, and enough
of them uncooked. It is one of the best health “assurances”
you can do! Virtually all vegetables are alkaline, even

RECIPES FOR HEALTH
FRESH SALSA
From Brenda Dietrich Ingstad at Heartland
The ingredients in salsa are excellent for liver support,
so keep some fresh salsa available to enjoy as a healthy
condiment. Salsa is great on all kinds of dishes –
black beans, yuca, deep water fish, hormone free chicken,
lentils, rice dishes, millet and much more. Cilantro is
a known for its chelating ability, especially for pulling
mercury from the blood. Salsa is a great way to enjoy more
raw, living foods!
12 finely chopped Roma Tomatoes
1 Sweet Onion
3/4 C. Cilantro
2 tsp. Sea Salt
Juice of 1 Lime
1 Garlic clove
1 chopped jalapeno pepper (more or less depending on how
hot you like it!)
Finely chop onion, cilantro and garlic. Mix with Sea Salt
and lime juice. Add the tomatoes to the mixture. Serve with
organic corn chips for dipping and enjoy!
