ALKALIZING YOUR BODY
One of the simplest natural health laws is to maintain
an alkaline environment in the body. While mainly fruits,
vegetables and nuts create alkalinity, meats, cereals, and
sugars create an acid environment. If you eat 50 - 90 %
alkaline forming foods and drinks (temperate climates require
less, tropical climates require more), you can remove yourself
from the SAD (Standard American Diet) statistics and dramatically
reduce your risk of disease (over 80% of "SAD" consumers
die of a degenerative disease.)
ALKALINE HIGHLIGHT: Lemons. They might taste sour and acid,
but in your body they are one of the most alkalizing substances
you can consume! A great balancing habit is to drink 1 teaspoon
of fresh lemon juice in 4 ounces of water every morning.
Limes and pineapples are also extremely alkaline-forming,
while grapefruits and oranges are only moderately alkaline
forming. Remember that cooking reduces alkalinity - and

agave nectar, fructose, or honey. Note: raw honey is slightly
alkaline forming while processed honey is slightly acid
forming.

RECIPES FOR HEALTH
Minty Cucumber Salad
From "The Raw Gourmet" by Nomi Shannon - page 59
2 cups chopped cucumbers
1/2 cups finely chopped mint
2 tablespoons chopped parsley
1 tablespoon lemon juice
1 tablespoon extra-virgin olive oil or grapeseed oil
3 drops stevia or 1 teaspoon maple syrup (optional)

Cucumber is an alkalizing food. It is considered to have
a purifying effect on the digestive system, and is very
beneficial to the skin. For a refreshing lift, lie down
with a cucumber slice over each eye for a few minutes or
rub a slice over your face after cleansing to tone and purify
your skin.
If your cucumber tastes bitter, slice it, place it in a
bowl, sprinkle it with sea salt and set a weight on it.
A plate with a gallon (4 liter) water jug on top or a zip-lock
bag filled with water works well. Leave the cucumber at
room temperature for two hours, rinse it lightly and pat
dry, then proceed with the recipe.
Fresh mint is, of course, best to use with this recipe,
but dried mint (five teaspoons) will work if you have time
to allow the flavors to blend. In a small serving bowl,
combine the cucumbers, mint, parsley, lemon juice and oil.
Toss together. Taste and add stevia if desired. Chill the
salad for several hours or overnight. Toss again before
serving. Serves 2-3.
