DID YOU KNOW?

You can completely lose one of your body’s detoxification pathways if you cumulate too many toxins. This can happen to ANYONE through ongoing exposure to common household cleaners, pesticides, pet products, and any of the 100,000 chemicals that have been introduced into our environment over the past 50 years. For more and more people every day, having compromised detoxification pathways results in a debilitating condition called MCS or “Multiple Chemical Sensitivity”, also known as environmental illness. Your body has two main detoxification pathways. They are also called xenobiotic pathways. “Xeno” means foreign – that is foreign to the human body, like synthetic chemicals, drugs of all kinds, and xenohormones (petrochemicals, pesticides and air fresheners that imitate estrogen in your body). Your xenobiotic pathways are responsible for getting these foreign elements out of your system. When you become chemically sensitive, your detoxification pathways are either clogged or overloaded. Even when you are not chemically sensitive, your body still uses a lot of energy and resources to process toxins as they come in – you don’t notice it on the outside, but on the inside EVERY “BODY” is chemically sensitive!

Since toxins hurt every “body” every time they are breathed, absorbed or consumed, common sense dictates that any reduction is important and well worth the effort. You never know how close you, someone you love or someone down the street is to becoming chemically sensitive. The easiest way to reduce toxins is to stop spending money on them. At the store, products with a warning on the label indicate the level of toxicity. The three signal words to alert consumers of lethal toxicity are “CAUTION”, “WARNING” and “DANGER”. Can diet help with breast cancer risk?

In his book What Your Doctor May Not Tell You About Breast Cancer, John R. Lee, MD dedicates an entire chapter to how nutrition affects your breast cancer risk. On page 262 he states, “Experts agree that environmental risk factors, such as diet and exposure to toxins and pollutants, account for about 80 percent of breast cancers” and that “among the environmental risk factors for breast cancer, diet is probably at least as important as exposure to toxins.”

He doesn’t recommend the same diet for everyone, but that each woman find the combination that includes cancer-fighting foods, excludes cancer-causing foods, and works best for her particular physiological makeup. Here are his general guidelines:

DOS AND DON’TS OF THE ANTI-CANCER DIET (from page 289)

DON’T eat lots of meat; use it as a condiment rather than a main course.
DON’T eat meat, eggs, or dairy products from conventionally raised animals.
DON’T use hydrogenated or otherwise trans-fats and –oils.
DON’T eat refined grain products or foods with added sugar.
DON’T drink too much alcohol, but don’t deprive yourself if you can be moderate about it.
DO eat plenty of a wide variety of vegetables, especially of the Brassica (cruciferous) and Allium genera.
DO eat whole fruits when you want something sweet.
DO eat deep-water fish two to three times a week.
DO eat whole grains and legumes.
DO take a daily multivitamin and mineral supplement.
DO drink eight to ten glasses of clean water a day.
DO use small amounts of olive oil or butter for cooking.
DO eat plenty of garlic.
DO choose organic whenever possible.
DO eat a high-fiber diet. (If you don’t move your bowels at least once a day, add extra fiber to your diet in supplement form, drink more water, and get more exercise.)

ALKALIZING YOUR BODY

Following John R. Lee MD’s guidelines above is another way to maintain an alkaline environment in the body. All vegetables are alkaline, while meats are highly acidic. Keeping your alkaline reserves (calcium, magnesium, sodium, potassium, iron and manganese) from depleting is also critical to the functioning of your xenobiotic pathways – your body’s ability to detoxify from chemicals, poisons, and medications.

ALKALINE HIGHLIGHT: Garlic. Well known as a healing food, garlic is a 6.0, or a moderately alkaline forming food. Among the special endowments of garlic is its ability to elevate acid food 0.5 in an alkaline direction!

ACID HIGHLIGHT: Meat. Beef, goat, lamb and pork are the most acid forming at a 1.0 on the scale. Chicken, deer, rabbit and turkey are a 1.5, while fish and shellfish are a 2.0. As a whole, meat is taxing on the body’s alkaline reserves. It also has the highest concentration of pesticides since it is higher on the food chain. “Clean” meat is a priority for optimal health – look for kosher and organic whenever possible.

RECIPES FOR HEALTH

HUMMUS – A classic garlic recipe.
From Don Colbert, MD’s newest book What Would Jesus Eat?*

Soak chickpeas or garbanzo beans overnight. Drain them well. For every two cups of chickpeas, add one quart of fresh water, and bring the chickpeas to a boil, then allow them to continue simmering for one to two hours (until tender).

Drain off the water, and place the chickpeas into a blender or food processor. Puree. Then for every two cups of chickpeas, add:

½ cup of tahini (sesame butter) or less (depending on taste)
2 tablespoons of extra virgin olive oil
1 clove of garlic (finely minced)
juice from 2 medium-sized lemons (freshly squeezed)
½ to 1 teaspoon of Celtic salt
½ teaspoon ground cumin

Thoroughly blend until smooth. Adjust seasoning as desired. Place in an airtight container, and refrigerate. The mixture should last approximately five days.
